A while back a client of mine read my post on turmeric, and emailed me this recipe found on Rawmazing. I filed it away in my extensive recipes library as I knew it was a special one for a special occasion. I love how it is dairy-free and packed full of my favorite spice: turmeric.
So, if you are entertaining tonite or wondering what you can bring to this evening’s NYE house party, consider this – because what better way to ring in the next decade than with healthy snacks?
Turmeric Veggie Dip and Appetizer
- 1 C Soaked Cashews
- 1 C Young Coconut Flesh (1 – 2 young coconuts)
- 1/4 Coconut Water (from young coconut)
- 2 T Olive Oil
- 1 Clove Garlic
- 2 t. Turmeric
- 1 t. Ginger
- 2 T Agave
- 1 Sliced Cucumber
- Optional: other dipping veggies (celery, carrots, etc)
Place all ingredients in food processor and process until smooth. This will take a bit and you will need to stop and scrape down the sides occasionally. Slice Cucumber and pipe the dip onto rounds. Alternatively, cut up veggies and use as a dip.
* Sometimes its hard to find young coconut – I think this recipe will work with a substitute of something else….maybe zucchini?
